Lip Puckering Lemon Cheesecake
Makes 6 Serves
125g Aldi Sugar Free Digestive Biscuits
1-2 Tablespoons melted organic Butter (just enough to combine biscuits)
500g Cream Cheese
2.5 tsp Gelatine Powder (or per packet instruction)
2 tbsp Stevia
200ml Boiling Water
200ml Cold Water
4 tbsp Lemon Zest
3-4 tbsp Lemon Juice
Put biscuits in ziplock bag and crush with rolling pin till they become crumbs.
Add melted butter to make biscuit base. Press down into bottom of serving glasses.
Refrigerate for 2 hours.
Pour the boiling water into a large bowl and whisk in gelatine till dissolved.
Add the remaining cold water.
In food processor combine all ingredients. Including gelatine water.
Taste. Add more lemon or stevia to your required liking.
Pour mixture on top of biscuit base. Refrigerate until set.
Add lemon zest on top to decorate.
